                        Carrot Cake Bars
            Ingredients for 7-8 Servings

    1/2 cupbutter, melted
 - 
    3/4 cuplight brown sugar, packed
 - 
    1large egg
 - 
    1 cupflour
 - 
    1/4 tspbaking powder
 - 
    1 tspcinnamon
 - 
    1/2 tspsalt
 - 
    2/3 cupshredded carrots
 - 
    4 ouncescream cheese, room temperature
 - 
    1/4 cupgranulated sugar
 - 
    1large egg yolk
 - 
    3/4 tspvanilla extract

Method
-             Preheat oven to 375.
 -             In a large bowl, combine butter and brown sugar, then mix in the egg and vanilla extract. With a rubber spatula, fold in the flour, baking powder, cinnamon, and salt, adding the carrots last. Set aside.
 -             In a small bowl, beat together the cream cheese and sugar until smooth, then add the vanilla and egg yolk.
 -             Grease a medium baking dish. Fill with carrot batter, then fold in the cream cheese mixture. Mix as well or as little as you like.
 -             Bake for 30-45 minutes or until slightly firm on top. Serve warm.
